Almond Chicken Bake

I got this recipe from my friend Heather, way back when I was first looking for good Paleo recipes. It’s high in protein, gluten-free, and the whole family loves it.

Ingredients

  • 2 lbs chicken breast tenderloins
  • 3 eggs
  • 1 cup almond meal (or nut flour)
  • 2 tbs chili powder
  • 1 tbs Italian seasoning
  • 1 tbs garlic powder
  • 1/2 tsp cayenne
  • Salt and pepper to taste

Directions

Preheat oven to 400º. Line a 13 x 9″ baking pan with foil and grease it.

Mix all dry ingredients on a plate. Beat eggs in a shallow dish. Dip chicken in egg and then dredge in dry ingredients. Place coated meat into baking dish and bake for 7 minutes each side.

  1. I made this last night as well! It was really good. I made it a little crispier by putting the chicken under the broiler for the last 4-5 mins. This made a big difference in the crispiness! I also linked to you from my blog! :)

  4. I made this tonight and it was delicious! Perfect spice and the chicken was so moist and tender. I broiled the chicken for the last 4-5 minutes and it was perfect!

  5. Made this tonight for the family…very good!! Made my own almond meal. I split 4 breasts in half. Used 1 whole egg and 2 egg whites to make it healthier. Even with 8 halves I’ll use less egg next time as I found there was too much left. We all really enjoyed this and will make again. Thank you!

  11. I made these tonight (without the chili powder or cayenne) and my six year old called them “the goodest food EVER.” Broiled them at the end per another suggestion for 3 minutes and they were crunchy and so flavorful. Easy, healthy, tasty: this recipe is a keeper.
